What Are The Rules For Coffee Grading?

A coffee needs 80 points or above on a 100-point scale to identify as a specialty coffee. The Specialty Coffee Association has set some standards for specialty coffee. If coffee scores from 90–100, it is graded outstanding. Then for 85–89.99 score, coffee is graded excellent, while coffee scoring 80–84.99 is rated very good. If coffee has below 80 points, then it is not a specialty coffee.

The grading of green coffee happens through visual inspection and cupping. Green coffee beans are inspected and, then defective beans are counted. There should be zero primary defects and less than five secondary defects to get the title of specialty coffee. The process of cupping includes the roasting and brewing processes of coffee beans. The grades are given based on qualities like acidity, body, flavor, and aroma.
