 I used mint chocolate chip ice cream instead of vanilla because I wanted the peppermint flavor to be the star,

 and I used light peppermint syrup in place of the extract because that’s what I had on hand. 

The end result was a delicious dessert that is filling but not too heavy.

 It was perfect for ending a meal at my house or for making if I wanted something sweet after dinner out.
